Fold in the egg whites.
It will look kinda gross now.
You just have to trust.

Fold in the cream,
And now we’re cooking with gas.
But you have to chill.

minimum. Up to one day.
Theory is for nerds.

Mousse: The New Prozac.

I supposed I could have waited to post this, but this mousse is so freaking good I really thought you needed to know as soon as possible. I’m just trying to look out for you.

ONE YEAR AGO: Nothing… strangely enough, I was insane at this time last year too, although I think I was considerably more batshit then then I am now.

Ultimate Chocolate Mousse
9 oz. good dark chocolate, chopped
6 tbsp. unsalted butter
6 eggs, separated
4 tbsp. sugar
2 tsp. good vanilla
3 tablespoons Frangelico (or liqueur of choice)
1 c. + 1/2 c. heavy cream

Melt chocolate in a large bowl over a double boiler.

Whisk the butter into the melted chocolate one tablespoon at a time, then whisk in the egg yolks one at a time. Whisk in the vanilla and booze. Set the chocolate mixture aside.

Beat the egg whites; as they reach soft peaks, pour in the sugar and continue beating to stiff peaks.

Whisk a third of the beaten whites into the chocolate mixture to lighten it, then fold in the rest.

Beat 1 cup of the cream to stiff peaks, fold it into the chocolate in two batches.

Pour the mousse into your serving dish of choice.  Whip the rest of the cream and spread it over the mousse. Chill for at least two hours, if you can. Eat within 36.
