chessa, that sounds like a good solution. throw a poached egg on top for good measure, that’s what i say.
I opted for ricotta salata as the finishing aspect. If I hadn’t made quinoa to connect it all, the poached egg would have made it a fantastic breakfast/brunch.

I just bought some depressingly sub-par chorizo and I have been trying to figure out what to do with it. (My bad for buying Mexican fresh instead of Spanish.)
Around 6AM (unable to sleep last night) I decided the way to fix it is to dice it up and sauté it in a shit-ton of garlic, smoked paprika, and probably some cinnamon. Wilt some dark greens and mix it all together with quinoa and I think it will be salvaged into a meal.
