The Great Chocolate Hope: Mousse

Chocolate, eggs, cream
and maybe a glug of booze.
Or a couple glugs.


I’d write a real post,
but I’m having a relapse
So you’ll get haiku.

A cop out? Sure is.
But you get what you pay for,
and this shit is free.

Don’t skimp on chocolate;
It’s an insult to the mousse.
And I will find you.

There’s raw egg and booze,
so keep the preggos away.
(Good luck, this is fucking GOOD.)

Fold in the egg whites.
It will look kinda gross now.
You just have to trust.

Fold in the cream,
And now we’re cooking with gas.
But you have to chill.

In theory, two hours
minimum. Up to one day.
Theory is for nerds.

Don’t skimp with the cream.
Sure, you could go without it,
but you like good things.

Don’t you?

Mousse: The New Prozac.

I supposed I could have waited to post this, but this mousse is so freaking good I really thought you needed to know as soon as possible. I’m just trying to look out for you.

ONE YEAR AGO: Nothing… strangely enough, I was insane at this time last year too, although I think I was considerably more batshit then then I am now.

Ultimate Chocolate Mousse
9 oz. good dark chocolate, chopped
6 tbsp. unsalted butter
6 eggs, separated
4 tbsp. sugar
2 tsp. good vanilla
3 tablespoons Frangelico (or liqueur of choice)
1 c. + 1/2 c. heavy cream

Melt chocolate in a large bowl over a double boiler.

Whisk the butter into the melted chocolate one tablespoon at a time, then whisk in the egg yolks one at a time. Whisk in the vanilla and booze. Set the chocolate mixture aside.

Beat the egg whites; as they reach soft peaks, pour in the sugar and continue beating to stiff peaks.

Whisk a third of the beaten whites into the chocolate mixture to lighten it, then fold in the rest.

Beat 1 cup of the cream to stiff peaks, fold it into the chocolate in two batches.

Pour the mousse into your serving dish of choice.  Whip the rest of the cream and spread it over the mousse. Chill for at least two hours, if you can. Eat within 36.
