making ricotta is WAY less stressful than making pie crust.

&lt;strong&gt;elle&lt;/strong&gt;, there&#039;s no way to be too lazy to make ricotta, unless you&#039;re dead.  you literally just stand there and watch the pot. you have to stir a teensy bit, but maybe you could set up some kind of automated system to do that for you.
